Slow Roasted Tomatoes
A quick savoury snack
ingredients:
15 to 20 roma tomatoes (about 3 lb)
1⁄2 cup extra-virgin olive oil 2 tsp salt Fresh or dried thyme
Directions
Heat oven to 275°f. Cut tomatoes in half and arrange cut side up on a parchment-lined baking tray. Drizzle olive oil over tomatoes, then sprinkle with salt and fresh or dried thyme. Place in oven and roast for 3 hours or so, until looking quite dry but still tender.
